Just a suggestion, some of you probably do this already. I was craft director at a camp for years (800-1,000 kids per week).

For each craft, put everything for the project in a zip loc bag (one per child). All you have to do is hand out the bags (or have them on the table) when the children arrive.  It takes a little prep time, but I always get people who think they cannot help with anything else to help with this.  It saves lots of time during the craft sessions. You can waste soooooo much time passing out googly eyes and small stuff. Each child is responsible for the items in his/her bag (its amazing how they guard that stuff). You can either put the finished project in the bag or (we do this) have a box for chidlren to put the empty bags in. We recycle them for other projects.

I buy cheap zip loc bags and/or ask for donations. If each family picks up a box each time they buy groceries you soon have all you need.

Our VBS isn't til Aug.6th --Aug.10th and I did the same thing about putting the crafts in zip lock bags.  Had a work shop on June 14th and had about 8 people showed up to help and we sure did get a lot done.  Have another one planned June 28th.  We are planning on doing the wood clay critters for the third day for the older kids but could use some kind of plan for the little ones.(to go along with God is Strong?)  We plan on making up the wood critters ahead of time like with cookie cutters shaped like horse shoe a cowboy boot and what ever else we can come up with because it takes so long to dry so all they will have to do is paint them.  Also explain how it was done and show them it would not stick together without mixing it and that is how it got strong enough to mold together.(God is Strong) I sure they will have fun painting them.

My daughter (my craft lady) puts each crew's supplies in a Group can or popcorn tin. They then use the can as their own trash can if that is required for the project. When the group leaves, she empties the trash and fills up the cans with the next group's supplies. With the crews sitting on the floor around the can, it works for us!
